The Gaddum welcomes new head chef Sergej Dzivulskij

We are delighted to announce the appointment of Sergej Dzivulskijas our new head chef.

Sergej comes to Brockhole with a great depth of experience, having worked as an executive chef at major hotels and restaurants across the UK as well as the British consulate in Lithuania, and a passion for contemporary menus using regional, seasonal and heritage produce – Sergej’s an enthusiastic home-grower of heritage fruit and vegetables for his own table. 

With over a decade of working in busy kitchens Sergej is keen to develop a supportive nurturing environment in which the team itself can develop and grow, ‘a sense of well-being in the workplace is important’, he says, ‘a positive kitchen shows in our food and service.’

Sergej said, ‘I’m excited to have joined the Brockhole team as they look forward to a new year. Initially I just want to carry on developing the excellent reputation that Brockhole has established for its food and service since opening The Gaddum in 2018. Of course, I have some of my own ideas for the menus, and I am enjoying meeting some passionate local producers – including our own gardeners here at Brockhole’s Kitchen Garden.’

Sergej’s passion and ethos reflects LDNP’s own vision – to give our visitors an inspirationalexperience, sustain our cultural heritage, champion local producers and celebrate the flavours of the regions.

And Sergej and his team aren’t wasting any time – they are planning lots of passion and love for the menu for The Gaddum’s Valentine’s Day Dinner and are developing a signature Gaddum dessert that Brockhole’s original owner William Gaddum may have appreciated!
